I had the hair brained scheme to purchase a very large pumpkin at a low price. It turns out that the best pumpkins to eat are a different type than the carving pumpkins and that the smaller the pumpkin the more tender the meat but we made some good pumpkin pies, pancakes, etc. from this 75 pound pumpkin that I purchase for $15… nice!
Here is the process: cut up the pumpkin, cut into cubes, remove the rind (I used a potato peeler), boil, and then process into puree. This is going to give you a thinner puree than if you were to bake the cubes of pumpkin meat; it’s better for soups, etc. than for pies but you can compensate with less water in the recipe.
As you can see, we made soup, pancakes, and pie. I also made some pretty decent pumpkin latte. As it happens, Cat really doesn’t like pumpkin too much, so we were left with more pumpkin than we could really eat… a lot more. We are keeping some in the freezer but couldn’t keep it all. The rest we have given away or unfortunately pitched. Moral of the story is make sure when you buy ginormous amounts of food that everyone likes it.
